Feeling like pancakes this morning for breakfast?
Yet, want something that won’t weigh you down for the rest of the active day?
Something that’s light and fluffy, something that’s different from oatmeal but still makes you feel good about nourishing your body?
Something that you can feel good about serving your family?
Well, then try these light and and delicious flapjacks. Top them with whatever you can think of. Our family favorites are coconut and chocolate, but berries and whipcream (Tru whip) are good too!
We serve these with Field Roast brand apple sausages( available at most Whole Foods and some major chain groceriers).
Who ever said that eating plant based is boring isn’t in the know!
Tips for this recipe…
Use ground flax over whole flax seeds as we have harder time digesting the whole seed. Ground flax is available at most grocery stores or online.
Oat flour can be made from ground oats either in a blender ( on lower speed) or food processor.

To a large bowl, add the “curdled milk”, oil, flax egg, applesauce. Stir mixture well.
Add the dry ingredients all at once~ the flours, the baking soda and baking powder, salt, and oats.
Mix the dry ingredients into the wet until just incorporated. Be careful not to overmix.
Ladle pancake batter onto hot griddle or pan. Cover until small bubbles appear on the surface to flip each cake. Serve warm with various toppings and plant based sausage. ( we like Field Roast breakfast sausages).
