Description
Enjoy banana bread on the go as a light and tasty breakfast or mid day healthy snack.
Ingredients
1 1/2 cups oat flour ( can ground oats in blender or food processor to make 1 1/2 cups)
1 1/2 tablespoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup coconut sugar ( can sub brown/white sugar)
1/ flax egg ( 1 tablespoon ground flax mixed with 3 tablespoons water, let sit for couple minutes)
1 teaspoon pure vanilla extract
1/3 cup applesauce
1 1/2 cups mashed ripe bananas ( about 3 to 4 medium)
1 teaspoon cinnamon
1/4 cup chopped walnuts (optional)
Instructions
Preheat oven to 350 degrees.
Spray a muffin tin with non stick spray or use 12 muffin liners
In large measuring cup, mash thoroughly the bananas to measure 1 1/2 cups. Add the vanilla, applesauce, and prepared flax egg.
In large bowl, add the oat flour, baking powder and soda, cinnamon. Stir until combined.
Add the wet ingredients to the large bowl of dry ingredients. Stir until just combined.
Scoop the muffins with an ice cream scooper to make 12 muffins.
Top the muffins with the chopped walnuts.
Bake for 12 minutes or until a toothpick comes out clean.
